A simple meal that anyone can make and everyone will enjoy—This is the perfect dinner if you’re having a stressful work day or great for saving as leftovers. An all-around hearty dinner with little effort!

Ingredients

×          1 pound of lean ground beef

×          1 onion, chopped

×          1 green pepper, chopped

×          1 clove of garlic, minced

×          1 Tablespoon of paprika

×          1 teaspoon of dried thyme

×          3 ½ cups of beef broth

×          4 cups of egg noodles

×          10 ounces of frozen peas and carrots

×          ¼ cup of sour cream

Directions

1.      Brown the lean beef in a large non-stick pan over medium heat, breaking up the meat as it cooks.

2.      After beef is cooked, stir in onion, green pepper, and garlic. Cook for 5 minutes, stirring frequently.

3.      Stir in the paprika and thyme; add beef broth, noodles, peas, and carrots and then bring to a boil.

4.      Reduce heat to low and let simmer for 8 to 10 minutes—covered! Stir often until noodles are tender.

5.      Stir in sour cream and simmer without a cover for 2 minutes.

Are you ready to cook gourmet scallops in 30 minutes? This simple scallop and bacon combination is bursting with flavor yet it’s so easy to prepare and to cook. Invite over some of your toughest cooking critics and get a standing ovation for this delightful main course.

Ingredients:

  • 6 Tablespoons of olive oil
  • 3 Tablespoons of basil leaves; chopped finely
  • 1 clove of crushed garlic
  • 1 teaspoon of grated lemon zest
  • 2 Tablespoons of lemon juice
  • 1 teaspoon of fresh rosemary
  • 1 small red chile, fresh
  • 6 slices of bacon or prosciutto
  • 16 sea scallops, fresh

Directions:

  1. Soak 16 wooden or bamboo toothpicks for 6 minutes in cold water.
  2. Pulse the olive oil, basil, garlic, lemon zest, rosemary, lemon juice, and chile in a blender until its consistency is smooth. Pour contents into a glass measuring cup and set to the side.
  3. Cut each bacon slice lengthwise into 2 or 3 pieces; then, wrap a piece of bacon around each scallop and secure with a toothpick.
  4. Put the scallops on a plate and glaze them with ¼ cup of dressing (this will be roughly half of the whole amount).
  5. Spray 2 nonstick skillets with olive oil cooking spray and heat over medium-high heat.
  6. Cook each scallop for 4 to 6 minutes; cook on the sides that have the bacon until the bacon is slightly charred and the scallops are thoroughly cooked.
  7. Place scallops on a plate and drizzle with the remaining dressing.
